We work with local fishermen to bring you some of the best catches, but keep in touch with Australia through our dishes and imported ingredients. We dry-age and process our fish in-house to intensify the flavor profile and tenderise the meat, adding complexity and deliciousness to every bite.

Our ever-changing a la carte menu highlights these ingredients, drawing inspiration from Melbourne—a city of diverse, trendy, and very tasty food.

We were recently featured in the MICHELIN Guide 2024 and 2025, and have been honoured with the 2025 Tatler Thailand Best 25 Restaurants award, as well as the 2024 Tatler Best Thailand Best in Class (The Rising Star Award). Additionally, ranked among the Top 25 Restaurants in Phuket.

Chef Oat, Nattaphon Othanawathakij

After living in Melbourne for almost 10 years, working in both casual and fine dining restaurants, and catered for the Australian Open, Formula 1 Australian Grand Prix, and the Melbourne Cup Carnival. He came back to work for several years at a No.5 "World's 50 Best Restaurants" and a No.1 in "Asia's 50 Best Restaurants" before deciding to settle in Phuket.

Fascinated by endless opportunities of the vast Andaman Sea, he and his business partners established HEH in 2019.

In 2021, he took his team to gain victory as a Winning Challenger Chef at The Iron Chef Thailand and was a contestant and winner team member of Top Chef Thailand 2023.

With passion for both the kitchen and the slopes, he also became Thailandʼs first ever snowboarder to earn the world ranking spot in 2018.
